Red Velvet Muffins

Who would think that this classy dessert is so simple to make at your very own kitchen! Follow the simple steps and spoil your loved ones with deliciousness in red.

What you need:

  • 2 eggs
  • 1 ¼ cups vegetable oil
  • 1 ¾ cups sugar
  • 2 ½ cups flour
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1 tablespoon cocoa powder
  • 1 cup buttermilk
  • 1 teaspoon white vinegar
  • Red food coloring
  • ¾ teaspoon salt

Instructions:

  1. Preheat the oven to 180°C.
  2. In a bowl mix the dry ingredients /flour, baking soda, cocoa powder, salt/.
  3. Mix the eggs and sugar. Slowly add the oil while mixing. Add the vanilla.
  4. Add the vinegar to the buttermilk. Then add to the sugar/egg mixture.
  5. Add the red food coloring /bear in mind that after baking the color will become more intense/.
  6. Stir in the flour.
  7. Fill 2/3 of muffin cups.
  8. Bake 15-20 minutes.
  9. Top to taste – usually red velvet muffins come with cream cheese frosting. You can find the recipe below:

Cream cheese frosting

What you need:

  • 250 gr. Cream cheese
  • 6 ½ tablespoons butter
  • 3 ¼ cups powdered sugar
  • 4 tablespoons vanilla

Mix all the ingredients /medium to high speed/ until fluffy frosting. Style your muffins and enjoy!
